One magic ingredient: Bergamot, the precious green-yellow citrus fruit sustainably grown in the southern Italian province of Reggio Calabria. The peel of this PDO fruit is very rich in essential oil that in the last three centuries has been used also in high cuisine and drinks.
The Summit is celebrating Bergamot in style in collaboration with the chefs of Trattoria and Luigia Restaurants. Bergamot will be also an ingredient of the dish signed by Master Guest Chef Paolo Gramaglia (President*, Pompei) at the opening Summit Gala Dinner. “Bergamot in Dubai” is the name of an original cocktail created by the renown Florence based bartender Julian Biondi, that will be presented at the Gala Dinner and served in Bella Restaurant in the days of the Summit.
